What is pinsa

Few products in contemporary Italian gastronomy have built such a distinctive identity in such a short time. Pinsa was born in Lazio, established itself in Rome and, in little more than two decades, crossed regional and national borders to become familiar in specialist venues, restaurants, retail and international markets.

Pinsa con mortadella, stracciatella e granella di pistacchio servita su una pala
Codified in
2001
Not the archaeological rediscovery of a lost recipe, but the contemporary codification of a new baked product.
Flours
wheat, rice, soy
Wheat provides the main structure and allows the gluten network to develop; rice contributes to hydration management and crispness; soy plays a role in softness and structure.
Hydration
around 80%
During fermentation and baking, a pronounced irregular open crumb develops, with a crisp exterior and a soft, airy interior.
Fermentation
up to 72 hours
Prolonged fermentation changes the structure and aromatic profile and allows small quantities of yeast to be used.

“Changing without losing what makes Pinsa unique.”

Bruno Petronilli, “Pinsa, storia e identità”

Pinsa has conquered the world. I can say that with confidence. Once a local speciality, it has become the driving force behind an international culinary revolution, crossing borders and embracing different cultures.

The voices of pinsa

A Guide can measure and compare, but behind every number are people, stories and a craft. Before the new edition, we listened to some of last year’s leading protagonists. Flour, water, fermentation and technique are essential, but not enough: time, experience and sensitivity matter too.
